Crockpot Creamy Potato Soup!
I never was a cook. I grew up in an Italian household with two mother figures battling it out in the kitchen. They had some different styles and both would *ahem* offer their advice when I attempted to cook. Needless to say I didn't cook much.
Now that I am a SAHW/M/D-that is a stay at home wife/mom/daughter, I am spreading my wings. I really have to thank Pinterest. So many easy and yummy recipes are on display. Teasing me. It's fall and I am craving creamy soup and hot muffins. I found this recipe from Mama Loves Food! but cut the recipe in half.
You will need:
- 2.5lbs Potatoes diced
- 1 large onion diced
- 5 cloves of garlic minced
- 32oz chicken broth
- 8oz softened cream cheese
- 1 Tb salt
Add potatoes, onion, garlic, salt and broth to the crock pot.
I cooked it on high for 2.5 hours. I used the immersion hand blender for a few seconds while adding the softened cream cheese.
Top with your garnishes and enjoy!
YUM! I had 3 bowls myself. It's a winner and I was asked to make more. Definitely enough for 3 adults and multiple helpings.
